Is there a way to show kitchen cabinets, appliances, and bathroom fixtures without creating "holes"?

Not for FEP 5.0. (which you have to model as holes). FEP 6.0 update will have this feature planned in March 2007.

Also, can you put a closet in a room without doubling the floor covering?

There are two ways to do it: (1) use freedraw to draw around the perimeters of closet and room, (2) draw two areas separately and put them next to each other.
